Go-ya cuisines
Go-ya is one of the leading summer vegetables in Okinawa that has a addicted bitter taste. It is rich in vitamin C and is used in many dishes since the vitamins does not get lost when heated.
The most famous known cuisine made with go-ya is the "Go-ya Chanpuru", but it is used in other variety of dishes such as Kinpira (stir-fried), Tempura, chicken soup and much more. It is also delicious as simply slat pickled it or stir-fried with sesame oil.
Now a days, there are other ways to enjoy the go-ya such as sweets or sushi.
